Kushery

This is an Egyptian dish that is much like spaghetti is to Western Families. It is called Kushery; in Arabic it looks like كشلرلئ.

 

To begin you must individually prepare:

 

Cooked lentils (about 250 grams)

1 pkg small macaroni cooked

2 cups cooked rice

1-2 jars tomato paste, simmered with 2 tsp cumin and a little water to desired consistency. I also add about 2 TBSP tom paste and 1tsp cumin to the lentils after draining most of the cooking water off the lentils.

1-2 onions, fried in butter to crispy texture

Hot pepper sauce to sprinkle on top for taste.

 

With all the above prepared, assemble the kushery to the individual person’s liking (i.e. more pasta than rice, lots of sauce, or no sauce, etc.).

 

This makes a lot of work and mess initially, but can be frozen in individual servings for easy meals or snacks later, too. I hope it works and you enjoy a little taste of Egypt.

 

Egypt is a poor country with a large population (70+ million). Consequently, many of the common people have to survive on simple diets that are high in carbohydrates such as rice, lentils, other beans, flat bread (sort of like pita but thicker), etc. Kushery is an attempt to make these common foodstuffs a bit more interesting. In Cairo, there are many Kushery kitchens, where you can get a large plate of this very tasty dish for about $0.30 to $0.50. But you have to be careful of the sanitary conditions—many Westerners end up with sick stomachs and the runs. While we may think this is really cheap, many college-educated professionals may make only $100.00 to $125.00 a month.
