Potato Dumplings

Ingredients:

3 eggs

3 lb. potatoes

˝ c. flour

4 T. cornstarch

Salt and pepper to taste

Nutmeg to taste

Directions:

1. Boil, peel and mash potatoes
2. Mix all the ingredients with your hands. If batter sticks to your hands, add more flour.
3. Roll into balls the size of golf balls. Set aside.
4. Before dinner, drop the balls into a large pot of boiling water.
5. Lower heat to simmer, do not cover.
6. When dumplings begin to swim, they’re finished.
7. Take out with slotted spoon.
8. Pour sauce from Sauerbraten over dumplings.

Cook Time

Preparation: 15 minutes
Cooking: 12-25 minutes
Serves: 6-8 people.
